Brioche French Toast
This quick and easy recipe for indulgent French toast is great for a weekend treat or a lazy Sunday brunch.

You could just serve up this French toast on its own – or with syrup or jam or something similar – but I always like it served with a massive topping of fresh fruit!
Ingredients (serves 2):
- Eggs – 2, beaten
- Milk – 100ml
- Golden caster sugar – 1 tbsp.
- Lemon zest – 1 lemon
- Brioche loaf – cut into four thick (1 inch/3cm) slices
- Butter
- Maple syrup – to serve
- Fresh fruit – to serve
- Icing sugar – to serve
Method:
- Mix the beaten eggs, milk, sugar and lemon zest together in a large, flat-based dish. Lay the four brioche slices face down in the egg mixture and leave to soak for a couple of minutes, then turn them over with a spatula to allow the other side to soak in the mixture too;
- Heat a knob of butter in a frying pan. Once it’s melted, add the four brioche slices and fry on one side for about 3-4 minutes. They should have soaked up most of the egg mixture already, but if not, you can pour the remaining mixture over the slices while they’re in the frying pan;
- Check that the undersides of the brioche slices are a nice golden brown, then flip them over and give them about another 3 minutes on the other side;
- Once they’re golden brown on both sides, dish up two slices on each plate, then add your toppings of choice. I go for a mound of fresh fruit, a drizzle of maple syrup, and a sprinkling of icing sugar.
